I Mandorli

Under the lead of Maddalena Pasquetti, I Mandorli has been producing elegant, terroir driven wines that stand out in an area famous for being a Parker fiefdom. Biodynamic since its inception, the estate lies on an area formed by hills rich in iron and manganese, which are quite unique for the region, and this gives their wines a characteristic minerality that perfectly balances the typical richness of Maremma.

Toscana Rosso 'I Mandorli'

The grapes come from all the vineyards, harvested from younger or more abundant plots. Each micro-parcel harvested ferments separately in 10 quintal open tanks. The individual masses are then assembled in cement to carry out the malolactic fermentation. Refinement takes place in vitrified concrete tanks for 6 months.
Subsequently rest in the bottle.

Tasting notes: Bright ruby red color, scent fruity and enveloping, with hints of small red fruits, strawberries and wild spices. Palate is smooth, round, fresh and balsamic, juicy and satisfying

Sangiovese 'Vigna alla Sughera'

Vigna alla sughera and Vigna ai maiali are the two parcels of sangiovese, exposed respectively to North East and North West, which give rise to this wine. The two parcels are vinified separately in 10 quintals open tanks with manual punching down and, if necessary, pumping over. The parcel of Vigna alla sughera remains in post-fermentation maceration on its skins even after fermentation and is subsequently vinified after about a month and a half. After8 months of aging in wood of 25 hl and 16 hl the two plots are joined in the same mass to rest in cement additional 8 months. Subsequent refinement in bottle for 12 months.

Elegant expression of Sangiovese. The color has medium intensity, which tends to garnet, it is accompanied by a floral, balsamic and intrigant nose. On the palate it is velvety, extremely clean, acid and pleasant.

Cabernet Sauvignon 'Vigna al Mare'

The cabernet sauvignon parcels of the Vigna vecchia al mare and the Vigna nuova at the sea are harvested separately, following the scalar ripening of the grapes. The two parcels are kept separate for the duration of alcoholic fermentation, which occurs spontaneously in open mastelle of 10 quintals with pumping over and punching down. The two parcels are then assembled and aged in 16.5 hl barrels for 8 months and then racked into cement, where the wine rests for another 8 months. Further aging of 12 months in bottle.

Deep intensity and purple colour. The nose has notes of wild berries, black pepper and cloves. The palate is characterized by a full body, with balance between tannins and acidity.
