'Raspato'

Sangiovese & Aleatico Slightly cloudy with an orangey-pink hue. A delicate spritz with fine well-lasting bubbles for a Pet Nat. Flavors of green apple, white peach, unripe melon give the mouth a blast of freshness whilst a touch of biscuit character adds complexity. Much cleaner and less funky than you would expect from a Pet Nat.

Harvest: by hand Winemaking: spontaneous fermentation in stainless steel with indigenous yeasts Aging: méthode ancestrale Unfined/Unfiltered. No added SO2.

'Ninfa del Nera'

A fresh and flinty Italian blend from Umbria, with plenty of minerality and crunchy fruit. Aromatic, with notes of prickly pear and citrus, opening up with more green fruit on the palate and a savoury finish.

Ninfa del Nera is a white wine produced from Grechetto, Malvasia and Trebbiano grapes, with semi skin contact maceration followed by 6 months ageing in stainless steel tanks on its lees with weekly batonnage. No sulphites are added and no filtration.

'Salto dei Cieco'

Vinification : Traditional in red, keeping the cap of the skins submerged, with daily pumping over. Maturation : In stainless steel tanks, left to decant and clarify naturally and bottled without filtration or stabilization during the waning phase of the moon, always on clear sky days.

The result is a red able to enclose in a single glass freshness and smoothness, drinkability and richness of fruit, making honor to the two varieties used with a round, persistent and slightly spicy sip.

Fresh, juicy, and loaded with dark red and black fruit- cherry, plum and blackberry; layered with dried red flowers and herbs. Pleasantly rustic and pure.

Vinification : Traditional in red, at controlled temperature, without adding sulphites Maturation : In stainless steel tanks, left to decant and clarify naturally. Bottled without filtration, stabilization or chemical adjuvants, during the waning phase of the moon, on clear sky days

A beautiful blend of Pinot noir and Sangiovese grown on clay soils & fermented in terracotta anfora. Maturation : Ten months in terracotta amphorae with the skins, then in glass demijohns for four months and from here bottled without clarification, filtration and stabilization

Organic veering towards biodynamic principles, limited use of sulphites, no filtrations of clarifications, use of different vessels for fermenting and ageing: Francesco’s approach, uncompromising and deeply rooted in farming traditions, aims to create wines that are authentic, expressive, and loyal to terroir.
