Manual harvesting in the first ten days of September

Vinification: the grapes are delicately pressed and the musts obtained decant in a natural way, the Spontaneous fermentation is carried out at temperature controlled in steel vats

Refinement: 6 months in steel in contact with the fine lees, does not carry out the malolactic fermentation and, afterwards bottling, rests at least 3 months in bottle

Vinification: the grapes are gently pressed and the musts obtained decant in a natural way, the spontaneous fermentation takes place at a controlled temperature in steel vats and is closed in the containers in which it will carry out the subsequent aging

Aging: 12 months in amphorae and large
oak barrels Slavonia in contact with the fine lees, does not carry out malolactic fermentation and, after bottling, rests at least 6 months in the bottle

Umbria Sangiovese IGT 'Melograno'

Brilliant ruby red color. Its refined smell is of fruits of the forest, with ripe plum notes followed by herb and grassy notes. It has a pleasing taste, pleasantly mineral with soft tannins.

Grapes are picked and wines made separately, the wine-making process is carred out in steel vats with short maceration and controlled temperatures. Maturation: 12 months in stainless steel vats and 2 months in bottle.

Suggested food pairings: Cold meat cuts, first courses, meat ragouts and semi-hard cheeses.

100% Sagrantino hand harvested early October

Vinification: the grapes are gently pressed and the must obtained is left to macerate for an average of 8/10 days on the skins, spontaneous fermentation takes place at a controlled temperature in steel vats, followed by racking and malolactic fermentation

Aging: 30 months in large 50 Hl Slavonian oak barrels and, after bottling, it rests for at least 6 months in the bottle
