assembled during fermentation.

without the use of sulfur dioxide. Aging in lava stone tanks at Ribelà
Other: No fining, no filtration, no added sulfur dioxide in any
stage of vinification and bottling

FOURTH PROTOCOL comes from a mix of Sangiovese and Merlot grapes. The vines are trained with spurred cordon and are treated exclusively with copper (a little) and sulfur. The must ferments in contact with the skins for 50 days and the wine undergoes no clarification and/or filtration and no addition of sulfur dioxide. The result is a fleshy, tasty and sanguine red that brings the quiet and, at the same time, wild territory of Umbria directly into the glass.
