Cantina Valpolicella Negrar was founded in 1933, and today has over 200 members with one of the most modern cellars in the region. The Cantina di Negrar line is the heart of the cooperative, with the best wines from the Veneto area represented. Years of research into the best vineyard sites has identified a range of crus which are represented under the premium Domìni Veneti label.

Valpolicella Classico Biologico

Bursting with youthful, bright cherry and redcurrant flavours in a smooth and generous style.

The Valpolicella Doc Classico Biologico comes from grapes grown in organically managed vineyards which are located on the highest hills in Valpolicella Classico.
Harvest: end of September, with selection exclusively manual. Vinification: the grapes are subjected to soft pressing. Fermentation at the temperature of 25-28° C followed by maceration for 7 days. Aging in stainless steel. Completes malolactic fermentation.

Valpolicella Ripasso Biologico

Sweet red berries, mint and spices jump from the glass in a racy, fruit-driven ripasso that is fresh and juicy to the core.

Harvest: beginning of October with selection exclusively manual. Pressing with destemming of the grapes. Fermentation between 25 to 28 °C. Maceration for 10 days 3 punchdowns per day for extraction of colour & flavour. Kept in stainless steel for 6 months. Amarone skins are then added for 15 days at a temperature of 15 °C, with punching down daily. Malo is completed & ageing in wood then bottled.

Valpolicella Ripasso ‘La Casetta’

A big, boisterous wine. Cassis, dried cherry, fig, prune, leather, mocha, smoke and game all take shape in this extroverted, juicy wine, loaded with richness but with enough structure to pull it all off.

The addition of 10% cabernet sauvignon means La Casetta has darker fruit notes and more structure than most valpolicella ripasso wines.

Amarone Classico

Intensely perfumed nose of dried red cherry, rose, violet, cinnamon, bay leaf and quinine. Dense, juicy and velvety, this is more about grace than power (though it has plenty of that too).

Drying of the grapes for 120 days before fermentation gives the wine intense flavours of dried fruit and a rich texture.

Cantina Valpolicella Negrar was founded in 1933, and today has over 200 members with one of the most modern cellars in the region. The cellars are located north of Verona, near Lake Garda, but the 600 hectares of vineyards cover the diverse areas of Valpolicella. The cooperative has always played an important role in the history of the Valpolicella zone - the first amarone ever bottled was produced here in 1934 - and the tradition continues through the impressive range of classic wines they produce. The Cantina di Negrar line is the heart of the cooperative, with the best wines from the Veneto area represented. Years of research into the best vineyard sites has identified a range of crus which are represented under the premium Domìni Veneti label.
