The wines of Marc Valette are unapologetically hedonistic. A true artisan, he left the Saint-Chinian cooperative in 1992 and immediately replanted his entire vineyards in order to follow an organic farming practice.

A cinsault-mourvèdre blend in a fresh style reminiscent of Beaujolais, Antonyme is the least extracted of Marc’s wines and is delicious drunk with a slight chill.

Une et Mille Nuits

Very classically Saint-Chinian, Une et Mille Nuits is a blend of primarily syrah and grenache, accented with carignan, mourvèdre and cinsault. Extended cuvaison and 18 months ageing in concrete and used barrels.

Ivresses

Ivresses (meaning drunkenness) is a love letter to grenache, and like his other wines, Marc doesn’t do things by halves. The fruit is manually harvested from a south-facing clay-limestone site with yields kept very low. Maceration is extended to 80 days with numerous punch downs, meaning we get the full spectrum of grenache’s fleshy fruit profile, from wild strawberry to juicy dark plum, but with plenty of tannins for structure. The wine is aged for 18 months in stainless steel, resulting in a seductively silky texture and an emphasis purely on the fruit.

Maghani

Combining power and finesse, Maghani is a force to be reckoned with (much like Marc himself). Of all the wines, this cuvée encapsulates the passion and zeal of Canet-Valette. A blend of the best syrah and mourvèdre, the wine undergoes 2 years of ageing in new and used barrels, with a further year in bottle before release.

If historically the wines were unapproachable in their youth, both Marc and his wines have softened a bit in recent years. But one thing that has not changed is Marc’s dedication to the wild, rugged and raw Languedoc terroir, and this continues to be reflected, vintage after vintage, in these stunningly complex and powerful wines.
